About this ingredient
Citral is a naturally occurring acyclic monoterpene aldehyde — a mixture of the geometric isomers geranial (α-citral) and neral (β-citral) — isolated by fractional distillation from Indian lemongrass oil (Cymbopogon flexuosus). Standardised to 95% min purity, it delivers a powerful, fresh lemony top note prized in flavour, fragrance and as a starting material for downstream aroma chemicals such as ionones and Vitamin A.
